Today, I start my journey of veganism. If you personally know me, you know I’m one whose all for being healthy, but I owe that all to the influence of Crossfit. BTW… I’m not the best example, lol. Unfortunately, I always find myself starting something and not making it to the finish line, but this time I am determined (cross fingers) to finish the 30 days in its entirety!
Anyways, I woke up a little late this morning and basically spent an hour prepping the food before work. On this week, I chose the following:
- Breakfast: Acai bowl
- Lunch: Eggplant Sandwich
- Dinner: Sweet Potato Salad
W R O N G C H O I C E S! ! ! Now don’t get me wrong all of these meals were absolutely D E L I S H, but definitely looking for other vegan options that are more suited for meal prep. I’ve also decided to have the eggplant sandwich for dinner and put the salad for lunch! I’ve decided to do this because I did not even get to my sweet potato salad! I got home from work and had a smoothie and next thing you know I’m full as ever and looking like a pregnant woman… so basically I had a smoothie for dinner. Tomorrow is another day, so maybe I’ll be able to eat the salad! All in all, day I of veganism was a success and I actually like the feeling of being full!
